Cheddar was the wrong cheese; too strong a flavor. I would swap in swiss cheese for a milder taste which would complement the creamy cream cheese. But overall a quick and delicious meal.

Yum! Now I have one more breakfast/brunch recipe idea to play with… and I’ll start with mushrooms, Hatch green chiles, bacon and cheese. Your photos, as usual, are amazing!

A million years ago or so when I was a student, after the Christmas holiday, Dad returned my brother to his halls in Bristol, and me to my student house in Oxford. The house had been completely empty for about three weeks. We’d cleared, cleaned and turned off the fridge-freezer before going. I was the first one back, and it was after the shops had shut on a Sunday. And I was starting to get hungry… I made scones! Sort of… I had some powdered milk because I’d thought it might come in handy at some point, dried apricots, cornflour, sugar… Can’t remember what else ended up in these – possibly dried apple rings, probably a bit of spice, plus water, not sure if I’d have added oil or just greased the parchment… They were rather heavy, but they tasted nice hot out of the oven, and tided me over nicely until I could get to the shops the following day :-)

Your “there’s nothing to eat, aargh” meal sounds yummier, and like something I’d eat quite happily even in the presence of other ingredients… ;-)
