In reply to Marta. Absolutely! If you only need to make it 2 days ahead, just store it in the fridge with a lid. Then reheat in the microwave or on the stovetop (probably easier on the stovetop if you're doing the whole batch in one go!).

Love this! I added a bit more stock at the end and cornflour as wanted more sauce but it is an absolute winner winner veggie dinner ❤️
