Amazing! Very easy and so so tasty :) One small change, I added an extra can of lentils (because yum). I also accidentally skipped one step in the oven, so I poured the bechamel on top immediately after mixing with tomatoes etc, oops :) it didn’t seem to matter that much as the veg was nice and tender and the sauce flavourful and creamy. Will defo make again!

In reply to Den. Nope, no reason you couldn't use a cheese sauce! It's more traditional to use a bechamel, but cheese sauce would be extra delicious ;)

I haven’t had a moussaka since going vegan but tried this, using soya milk and plant-based spread in place of the dairy. It worked so well and was super tasty! The potatoes didn’t do much for me so I’ll leave them out next time and maybe add mushrooms instead for extra substance. Thanks for another great recipe :)
