In reply to Sharon. Perhaps a courgette (zucchini)? It will cook down quite soft in the slow cooker but I actually think it might be quite nice if it breaks down into the sauce a bit?

I know this is a long past, but I just found this recipe looking for a ratatouille recipe. We are not a mushroom family. Can you think of a replacement that would work in the slow cooker? Thanks!
