Couldn’t get garlic and herb creamed cheese so added some herbs, and a tablespoon of tomato paste stired through. Was delish. Will make a double lot next time and have it as a side dish the next night. Love my vegies and cheese, true comfort food.

I tried this and it was so nice and I’ve made it a few times now !! I’m still new to cooking so I loved how quick and easy it was and how clear instructions were.

So much more tasty than I’d expected!
I’m not the biggest fan of aubergine, so I omitted that and upped the other veg, also adding yellow and green peppers. I roasted the veg on a foil lined tray so they cooked in a single, even layer and then tipped them into a baking dish for mixing. I used garlic-infused olive oil, and I confess to having added a good half teaspoon of salt too. I mixed in a little more cream cheese than as per your recipe – but I may have used more veg in total too. Finally, I topped with mozzarella rather than cheddar – I prefer the stre-e-e-etch and the “squeaky teeth feeling” that mozzarella gives. 😹
As a main, I’d say it made 2 good servings and worked well with a baked potato and broccoli.
It’s great to find a recipe that’s as simple as it is delicious. I see myself making this again and again – thank you!
