I lower the fat and the effort by oven cooking the sliced aubergine, spritzed both sides with spray oil, then stacking them to soften as they cool.5 stars

I’ve heard people say similar before! I actually find a white sauce really quick and easy to make, it only takes a minute or two, but I might try it your way next time anyway as an experiment :)

I made a similar one recently but the herbs I used were dried basil, oregano and a pinch of cinnamon. I used brown lentils rather than red and I also added more veggies – finely chopped carrot, mushroom & pepper, which meant it ended up way too much, so I froze half and we ate it with rice this week. And I used a cheese sauce instead of bechamel, with extra cheese grated on top! Like you say, it isn’t a quick meal but it is definitely worth the time.

This sounds a really yummy recipe.
